Mailchimp compatability was created by Garth Penglase
Will be very interested in using this due to it's multiple format model (component/plugin/module) when it works with Mailchimp. Would be happy to pay something for a commercial version if it worked well, was highly configurable and worked well with platforms such as Gantry and Bootstrap, where css overrides could be achieved easily.

I am currently working on a total refactory the low level interface of the component.
However, if you want to start this work, I can get give my contribute every time you encounter troubles.
Currently Fox Contact have subscription modules for AcyMailing and JNews. Such classes may be a good starting point for you.
components/com_foxcontact/helpers/fnewsletter.php,
components/com_foxcontact/helpers/acymailing.php, and
components/com_foxcontact/helpers/jnews.php

I found this tutorial to add a mailchimp subscribe option to a contact form:

How could this be applied to Fox Contact, using a checkbox instead of the radio buttons? I'm not sure in wich file (fsubmitter.php?) to put the code and how to alter it to pull in the necessary data from the form fields. Any help would be very much appreciated.

I'm sorry, but I've never seen the mailchimp interface before now.
However, before applying a such modification you must have a good perception of both mailchimp API and Fox Contact architecture.
